I know they need protein, sugar, and water. Most people feed killed insects and honey. Is there any benefit to this? Ants will eat cold cooked chicken if given the chance, can't I just feed my colonies off of our leftovers???

What an ant colony will and won't eat depends on the species. Almost all need insects of some sort. There are probably a few that could survive on human leftovers, but if you want to keep ants, you have to get comfortable with the idea of feeding insects.
