So one of my friends has these little critters turn up from time to time in her car. They are about 1mm in size and I never see them any other size. I suspect that they are some kind of beatle or roach, because she is often transporting different kinds of plants in her car.

Definitely in Dermestidae. Beetles in the family Dermestidae eat dead animals in one form or another, some flesh, some hides or hair (such as wool carpets).
